Sundara is one of the best Bali bars and serves innovative cocktails not often seen elsewhere, created in partnership with Barcelona cocktail master Javier de las Muelas of DRY Martini. Sundara’s avant-garde cocktails combine intricate preparations, unique textures and complex flavours accentuated by the trademark ‘secret ingredient’ of DRY Martini Droplets, the bartender’s equivalent of essential oils. Fresh, local Balinese ingredients such as starfruit, passionfruit and chili feature prominently to match the flavours of the Asian-inspired dinner menu.
To further complement the dinner menu’s Customized Dining concept, Sundara has introduced six innovative new Customized Cocktails, each available in three sizes: Small, Medium and Pitcher. Guests can order pharmacy any of the new cocktails as a small portion (around 150mL), upgrade to a Medium (400mL) on their favourite mix, or take a Pitcher (2L). With flavours that pop like cardamon, rosemary, yuzu and tonka bean, the Customized Cocktails selection is perfect for sharing – or not!
Beyond cocktails, our thoughtfully curated collection of old and new world wines includes 11 selections available by the glass. With two sunset bars in Bali — one in the air-conditioned Lounge and the other on the open-air Mezzanine with sweeping coastal views — guests can relax in an intimate booth, get to know their bartender at the counter, mingle on the terrace, or wine and dine in the restaurant dining rooms.
